Pati Shapta


'Poush Porob' or 'Pithe Porob' is the harvest festival in Bengal. Otherwise known as 'Makar Sankranti', this is the day when farmers offer their prayings to Mother Earth before hitting the fields with their sacks & sickles in tow. And we consumers do our part by feasting on Pithes, Pulis and Nolen Gurs. I share with you the recipe for Pati Shapta, the simplest (and, to me, the tastiest!) of the lot.

All you need is 2 cups Maida, 1 cup Sooji, 1 cup Khowa, 1 can of condensed milk, some milk and some oil.

In a pan, mix the Khowa & the condensed milk. Bring it to a boil on a slow flame. Turn off the heat when the consistency is thick enough for a filling. No need of adding sugar. Condensed milk takes care of the sweet part. Now, mix together the maida & sooji with some milk & water. Prepare a running batter, similar to what you would do for a Dosa. In a tawa, drizzle some oil, pour in a ladle-full of the batter, and spread it out evenly. When the edges turn crisp, put in a spoon of the filling & rollover  the pancake. Serve with Nolen Gur (Sugarcane Jaggery) if available, or else devour as it is!
